These Lean Mean Bison Enchiladas are quick, easy, healthy, and delicious! Made with ground bison, onions, jalapeños, and topped with red enchilada sauce and cheese, they are a perfect meal for any day of the week.
On medium high heat, grease a pan (I used a 10 in cast iron skillet) & sear and break up the bison, cook until about done then remove from the pan.
In the same pan, add your diced onion & jalapeños. Sauté for a few minutes then add the bison back in.
Season to taste & add 1/2 of your enchilada sauce and let simmer until it thickens, then remove from the pan.
Spread a layer of enchilada sauce on the bottom of the pan.
Fill your tortillas and wrap tightly then place seam side down into pan.
Put remaining enchilada sauce over top, then the cheese and the sliced jalapeños.
Bake at 375 for around 20 minutes.
 Garnish with cilantro.
 Plate & ENJOY!
