A protein-packed breakfast hash made with ground bison, russet potato, kimchi, and eggs. Perfect for post-workout recovery, this recipe combines clean carbs and healthy fats to fuel your morning.
Prepare all ingredients by dicing up the potatoes, slicing the green onions, and chopping up the kimchi.
Get a skillet going over medium-high heat. Spray with avocado oil then add in the ground bison. Break it up and season with salt, pepper & garlic powder. Cook until done to your liking.
Remove the bison from the pan. Drop the heat to medium, add in the ghee followed by the potatoes. Season with salt, pepper & garlic powder. Mix and let cook for 8-10 minutes, stirring occasionally.
Add in the green onions and cook for a minute, then mix in the kimchi, ground bison, and Korean BBQ sauce. Let everything cook together for another 5 minutes.
Once the hash is ready, keep it warm over low heat while you cook the eggs.
Plate the hash and top with fried eggs and garnishes, then enjoy!
