Instructions

1: Let steaks come to room temperature.

2: Pat the steaks dry with paper towels, then coat in olive oil and season generously on all sides.

3: Set the grill up for 2 zone cooking. Grill the steaks over the direct heat for 2-3 minutes per side to build a nice crust, then move them to the indirect side. Top with blue cheese crumbles and let finish cooking until they reach the desired internal temperature. (125-130 degrees for medium to medium-rare.)

4: Let the steaks rest for 8-10 minutes. Torch or broil the blue cheese, drizzle on some balsamic glaze, garnish, and enjoy!
