Instructions

1: Cut the chuck roast into ~1.5 in cubes.

2: Coat them in yellow mustard as a binder, then season on all sides with the BBQ rub.

3: Place them on the smoker at 250°F until they develop some bark and reach around 165-175° internal (2-3 hours).

4: Take them off the smoker and place them in a large pan. Sprinkle on the brown sugar and more BBQ rub. Add the pats of butter and drizzle on the BBQ sauce, then cover tightly in foil.

5: Place them back on the smoker until they reach 205° internal (1-2 hours), then pull them off.

6: Let them cool for a few minutes & enjoy!
