Wagyu Filet with Caramelized Onions

1: On low heat, add a few tablespoons of ghee to a large skillet. Then add in the onions.

2: Add olive oil, salt, pepper, and rosemary. Mix and let caramelize, mixing every few minutes for about 40 minutes or until desired texture.

3: For the steak, let sit at room temperature, pat dry, coat with oil and season all sides generously.

4: Place in the oven on a wired rack at 275°F until 10-15 degrees short of the desired internal temperature.

5: Sear on high heat in ghee or oil for about 90 seconds per side.

6: Plate everything up and enjoy!
